These flavorful Vegetable Kebabs are marinated in a delicious herb olive oil and fresh lemon marinade and then grilled until tender and caramelized. Perfection just waiting for you to enjoy! This recipe is super simple to make so you won’t be spending a ton of time in the kitchen, no need to slave over a hot stove for this dish, especially as we head into summer! Grilling the kebabs adds a nice smokiness and slight char to the vegetables, which only enhances the flavor of the marinade. Served as the main course for a vegetarian meal on top of rice or as a side dish to any meal, these kebabs will most certainly be the star at your dinner table!
What You’ll Need For The Vegetable Kebabs
Most vegetables can be skewered and served on a kebab. For this recipe, we’ve chosen some of our favorites, which grill up in the same amount of time. Of course, feel free to omit some of our choices and add your favorites. Word of caution here, if you choose to use harder vegetables such as potatoes, carrots, or cauliflower, it’s best to par-boil them first before adding them to the skewer. Experiment and have fun!

Making the Marinade
We went with a classic Mediterranean marinade for these Vegetable Kebabs, uncomplicated and yet it brings out the incredible flavors of the vegetables.

- Olive oil
- Fresh lemon juice
- Oregano
- Basil
- Garlic
- Salt & Pepper
How to Make the Kebabs
- Whisk together all the ingredients for the marinade.
- Wash and cut the vegetables into chunks approximately the same size, leaving the tomatoes and mushrooms whole. (Do not wash the mushrooms as they will absorb the water, instead clean them with a dry cloth or paper towel) Place cut vegetables into a large bowl.
- Add the marinade to the bowl of vegetables and mix thoroughly. Allow the vegetables to marinate in the refrigerator at least 4 hours or as long as overnight, mixing occasionally. Longer is definitely better, but If you do not have the time to wait, let the vegetables sit for 15 minutes before grilling.
- If you are using wooden skewers, they must be soaked in water for a minimum of 30 minutes to prevent them from burning or catching fire when placed on the grill. No preparation is needed if you use metal skewers. Thread the vegetables alternately onto the skewers.
- Preheat your grill to medium and grill the vegetable kebabs for 10 – 15, rotating every 3 – 4 minutes until tender. Serve immediately.

Vegetable Kebabs
Ingredients
- 2 8 ounce pkg whole mushrooms
- 1 cup cherry tomatoes
- 1 red pepper cut in chunks
- 1 yellow pepper cut in chunks
- 1 orange pepper cut in chunks
- 1 red onion cut in chunks
- 2 medium zucchini sliced into thick rounds
- 1/2 cup olive oil
- 1 lemon juiced
- 1 tsp oregano
- 2 cloves garlic pressed
- Salt and Pepper to taste
Instructions
- Wash and cut the vegetables.
- Place vegetables in a large bowl
- In a small bowl whisk together the olive oil, lemon juice, oregano, garlic, salt and pepper.
- Add the marinade to the vegetables and mix thoroughly. Cover the bowl with plastic wrap and refrigerate. Allow the vegetables to marinate in the refrigerator for at least 4 hours or as long as overnight, mixing occasionally.
- When ready to grill, soak skewers in water for 30 minutes.
- Preheat the grill on medium and lightly oil grates.
- Remove vegetables from the refrigerator and alternately thread mushrooms, tomatoes, peppers, onion and zucchini onto the skewers, reserving marinade.
- Add skewers to the grill. Grill for 10-15 minutes or until vegetables are tender, turning every 3-4 minutes and basting with marinade. Remove skewers from the grill and enjoy!
