So without further ado let’s dive right in!

- Pita bread
- Tzatziki sauce
- Feta cheese
How to Make SHEET PAN Chicken Gyros
The key to this recipe is the rub. Let’s repeat – the key is the RUB! We recommend allowing the chicken to marinate for at least one hour so that it absorbs all the wonderful aromatic flavors. If you want, you can prep the chicken the night before and let it marinate in the refrigerator until the next day.
Combine all of the rub ingredients in a small bowl and whisk together. Prepare the chicken by cutting the skinless, boneless breasts into strips and adding them to a bowl. Drizzle the chicken with olive oil and the juice from one lemon. Next, add the spice rub over the chicken and toss until the chicken is fully coated. Cover the bowl with plastic wrap and refrigerate for at least one hour (or overnight).

Preheat the oven to 375 degrees F. Remove the chicken from the fridge and arrange it on a parchment-lined baking sheet. Add the vegetables on either side of the chicken and drizzle with olive oil, a sprinkle of oregano, salt and pepper. Place the baking sheet in the oven and roast until vegetables are tender-crisp and the chicken is cooked through about 20-25 minutes. While the chicken is cooking, prepare the Tzatziki sauce (click here for the recipe). Remove the chicken and vegetables from the oven and get ready to assemble the gyros.
Assembling the Gyros
On a skillet, griddle, or over an open flame, char the pita bread until it begins to brown. This only takes a few seconds, be careful so that you don’t burn the pitas. Transfer the chicken and vegetables to a serving dish. Add a dollop of Tzatziki sauce (we like the sauce on the bottom, it prevents it from spilling out of the top when you bite into the gyro!) to the warm pita bread and add some chicken and vegetables. Sheet Pan Chicken Gyros
Ingredients
- 4 chicken breasts boneless & skinless
- 3 bell peppers
- 1 white onion
- 3 tbsp olive oil divided
- 1 lemon juiced
- Tztatziki Sauce
Rub
- 1 tbsp dried oregano
- 1 tbsp dried parsley
- 1 tsp dried basil
- ½ tsp dried thyme
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp chili powder
- ½ tsp paprika
- ½ tsp cumin
- salt & pepper to taste

- Combine all of the rub ingredients in a small bowl, and whisk together.
