How to Purchase Fresh Cranberries
Cranberries are one of those fruits that have a very short season, which is why you only see fresh cranberries in the stores from October through December. Choose berries that are plump, firm, shiny and deep red in color. If you are buying the cranberries already sealed in a bag, give the bag a thorough once-over to make sure there aren’t any soft or mushy ones inside. Once you bring your cranberries home, store them in the refrigerator— they will stay fresh for about a month. If you absolutely can’t live without cranberries throughout the year, buy a few extra bags and store them in the freezer; they’ll keep for a year!
Choosing the Perfect Sweet Potato
- Don’t buy a potato that has any squishy parts! Totally a no-no! Once a sweet potato goes bad there’s no cutting out the bad part, they deteriorate very quickly.
- You’ll want the potato to be firm, have even skin (no wrinkles here please) and feel slightly heavy.
- Purchase small- to medium-sized potatoes with no cracks or bruises.
- Store your potato in a cool, dry, dark place (not the refrigerator).
For this recipe we chose to peel the sweet potato, but if you prefer to leave the skin on, just scrub them under cool running water and then pat them dry.

Roasted Sweet Potatoes with Feta and Cranberries
Ingredients
- 5 sweet potatoes peeled and cut in cubes
- 3 tbsp olive oil
- ¼ tsp oregano
- ¼ tsp garlic powder
- salt and pepper to taste
- 1 cup fresh cranberries
- ½ cup crumbled feta cheese
Instructions
- Preheat the oven to 375 degrees and line a baking sheet with parchment paper.
- In a large bowl add the cubed sweet potatoes, 2 tablespoons of the olive oil, oregano, garlic powder, salt and pepper. Mix thoroughly and add them to the prepared baking sheet.
- Roast in the oven for 20 minutes on the center rack. After 20 minutes, remove the baking sheet and add your fresh cranberries to the baking sheet. Return the pan to the oven and roast for an additional 10-15 minutes until the cranberries are bursting.
- Remove the sweet potatoes from the oven and sprinkle the feta cheese on top along with an additional tablespoon of olive oil. Serve immediately and enjoy the sweet, creamy and tart flavors of a perfect Autumn dish! Enjoy!
