Watermelon Radish Salad topped with dill and feta cheese

Have you ever heard of watermelon radishes? No? You’re not alone! Alexa here, and I hadn’t either until last weekend. I discovered the prettiest of all radishes while browsing the Dekalb Farmers Market. I read the name on the sign which was the first thing to intrigue me. Then, I looked at the root vegetable and it didn’t look like anything special from the outside. It looks like a large light green almost white colored radish. So I thought, there HAS to be more to this! So I bought one. I couldn’t wait to get home and see if my suspicions were right and the inside would be where all the glory was and oh man it did not disappoint. Wait, let’s pause for a minute did I just say I couldn’t wait to get home to slice into a radish? Really? Who am I? LOL!

Ok back to the radish, the color is AMAZING! The inside has beautiful ombre bright pink coloring with a light green ring around the edge, so it really looks like the inside of a watermelon. The flavor is very light compared to other radishes, and slightly peppery. But it’s not just all about their looks, radishes are low in calories, have almost no fat and a great source of vitamin C, antioxidants and minerals.

Since the sliced radishes look “extra” enough on their own, I decided to use them into a simple Watermelon Radish Salad. They taste best thinly sliced so if you don’t have the steadiest of hands for freestyle knife skills use a mandolin. I also used a mandolin to slice a cucumber. Cut up a perfectly ripe avocado and assembled my salad. For toppings, I used fresh dill and crumbled feta cheese (surprise, surprise!). Then drizzled on some olive oil, squeeze half a lemon and sprinkled with salt and pepper. So simple but it looks sooo pretty! And it takes less than 15 minutes to put together.

This salad is great by itself or served alongside a main dish, perfect for brunch and gives you all the spring/summer feels!

Watermelon Radish Salad

This recipe for Watermelon Radish Salad is light, crisp, bright and super easy to make. With just a few ingredients and a mandolin, this dish can be whipped up in less than 15 minutes and looks so fancy.

Ingredients
  

  • 1 large watermelon radish
  • 1 cucumber
  • 1 avocado
  • ¼ cup feta cheese
  • 1 tbsp chopped fresh dill
  • ½ tbsp olive oil
  • juice from ½ a lemon
  • salt and pepper to taste

Instructions
 

  • Using a mandolin slice the watermelon radish and cucumber into even thin round discs.
  • Cut the avocado in half and remove the pit, peel the skin off and turn the half cut side down to evenly slice.
  • On a large plate assemble the salad by layering the radish and cucumber discs, top with sliced avocado and crumble the feta cheese (if using blocked cheese).
  • Lastly drizzle with olive oil, lemon juice and sprinkle with dill, salt, and pepper to taste. Serve immediately or chill until ready to serve. Store in an airtight container in the refrigerator.

Notes

To make this recipe vegan, omit the feta cheese or sub for vegan cheese.
