Looking for a quick and easy weeknight dinner? Try our Mediterranean Quesadillas! It’s the perfect dish for when you have leftover chicken and not a lot of time to start dinner from scratch! Another time-saving option would be using ready-made rotisserie chicken.
What’s in Mediterranean Quesadillas?
Made with all the great ingredients that say “that’s Greek to me” like feta cheese, Kalamata olives, oregano, and spinach. We used whole wheat tortillas instead of flour tortillas to keep this dish on the lighter side. Whole wheat tortillas have fewer calories and fat than flour. If you are watching your gluten intake you can also sub with corn tortillas. Pair these quesadillas with some homemade Tzatziki sauce for dipping and you are all set.

Mediterranean Quesadillas
Ingredients
- 1 10 ounce bag fresh spinach
- 1/2 medium red onion chopped
- 2 diced chicken breast grilled or baked
- 1 can artichokes drained and chopped
- 6 ounces feta cheese
- 1 cup low fat shredded mozzarella
- 1/2 cup pitted kalamata olives chopped
- 1 tbsp oregano
- 1 pkg whole wheat tortillas 10 count
- 2 tbsp olive oil
Instructions
- In a skillet, add the olive oil and heat on medium. Once heated, add the spinach and onion. Saute until spinach is wilted and onions are soft.
- Next add the artichokes, oregano, and the cooked chicken and heat thoroughly.
- Finish by adding the feta cheese and olives stirring until all the ingredients are incorporated.
- Heat your grill maker or quesadilla maker according to the manufacturer's instructions. If using a skillet, spray it with nonstick cooking spray and heat on medium
- Place one tortilla on the cooking surface and spread about ½ cup of the chicken mixture on top. Sprinkle a tablespoon of the mozzarella cheese on top of chicken mixture. Top with the second tortilla, pressing it down gently.
- Cook until tortilla is slightly golden brown. For the skillet method flip the tortilla and continue cooking until cheese is melted. About 2-3 minutes for both cooking methods.
- Remove and cut into wedges and serve warm with Tzatziki Sauce
