If you’re an avid follower of our journey then you know how much we love using Medjool Dates. Usually we use them as natural sweeteners but this recipe for Feta Stuffed Dates lets the fruit shine as a savory appetizer! These little jewels are the perfect “boat” for stuffing. Simply slit one side of the date with a knife, pull out the seed and voila…your vessel is ready!

We whipped up a creamy zesty filling made from Feta cheese (our favorite!) lemon zest, fresh dill, oregano, garlic and a little bit of olive oil. Technically you could be done and eat the stuffed dates as is but why stop there? Bake them in the oven for 7-10 minutes and serve them warm and O.M.G. the combination of the saltiness from the cheese, the herbs and the sweetness from the dates creates a rich and addicting bite!

Ingredients
  

  • 12 Medjool date
  • 4 oz block feta cheese
  • zest from 1 lemon
  • 1 tsp olive oil
  • 2 tbsp fresh dill
  • 1 tsp dried oregano
  • ¼ tsp garlic powder
  • pinch of pepper

Instructions
 

  • Preheat the oven to 375 degrees F.
  • In a small bowl crumble feta cheese (if using block cheese) and add in olive oil, lemon zest and spices and combine.
  • Cut the dates lengthwise and remove and discard the pits.
  • Line a baking sheet with parchment paper and spray with cooking oil.
  • Fill the dates with the cheese mixture and place the baking sheet.
  • Cook for 7-10 minutes until the dates are soft and the cheese has melted. Top with extra dill (optional) and serve immediately.
