During our first trip to Greece we were introduced to a traditional Greek dip that was so delicious we just knew we would have to learn how to make it. Having a wonderful dinner out with cousins one evening, they ordered a dip called Fava. Side note here: we became acquainted with our cousins (from the village of Mavria) on this trip after finding them on social media! Isn’t it wonderful finding family you never knew you had, and sharing your rich family history?! They are the most warm and welcoming people! Which, by the way, we found to be true of ALL the Greek people we encountered in Greece. They all certainly embody the Greek word “Philotimo” meaning honor, dignity, hospitality, warmth and friend, the Greek way of life!
All About Fava
Needless to say, we were totally blown away tasting this dip made with yellow split peas. Split peas are actually peas that are dried, hulled and then split in half, hence the name “split peas.” Split peas are not to be confused with fava beans or broad beans which are larger flat beans somewhat like lima beans. We are not huge fans of traditional green peas, so we were a little hesitant about tasting this dish. Weren’t we VERY pleasantly surprised that this dish doesn’t taste like green peas at all. We couldn’t stop dipping everything we had on our dish in it–fresh pita, vegetables, you name it! We can confidently say it was one of the best things we tasted in Greece, and we certainly tried our fair share of dishes!
It only takes a few ingredients to make this incredibly creamy, hearty, and full-flavored dip. We are kind of obsessed with how wonderful Fava accompanies roasted vegetables, raw veggies, pita bread, meat, and fish. You name it, Fava makes it taste better. Plus, Fava is filled with fiber, vitamins, heart-healthy fats, and antioxidants. Win-win!!

Let’s Dip into Fava!
Making the dip is a simple process. Cover your split peas with water, bring to a boil, add onions and garlic. Continue to cook until peas are tender and falling apart. At this point, you’re almost done. Yes, it really is that simple! Remove from heat, add olive oil and using an immersion blender, puree the peas until smooth and creamy. Spoon onto a plate or bowl, top with more olive oil, a sprinkle of paprika and a few chopped onions. Get ready for a dipping sensation like no other! Could a dip that tastes so fabulous be more simple to make?? Serve warm with your favorite accompaniments. We have no shame in saying we have been known to spoon it right out of the bowl and eat it just like that!

Ingredients
- 1 cup dried yellow split peas
- ½ cup red onion chopped
- 4 cloves garlic chopped
- 2 scallions chopped
- pinch of salt
- ¼ cup extra-virgin olive oil
- paprika
Instructions
- Add split peas to a saucepan filled with 2 ½ cups water.
- Bring to a boil, and skim any foam that starts to appear.
- Add the red onion, garlic and scallions and return to a boil.
- Reduce heat to simmer and continue to cook until peas are tender.
- Remove pan from heat, and add the olive oil and pinch of salt.
- Using an immersion blender, puree the mixture until smooth and creamy.
- Allow to cool slightly as Fava will continue to thicken.
- Place Fava in a serving bowl and top with additional slices of red onion, a splash of olive oil and a sprinkling of paprika. Serve warm and enjoy!
