It’s that time of year when we can enjoy one of our favorite salads, the Fall Pomegranate Salad.  A salad that has a combination of wonderful flavors, tart, citrusy, and crisp. The fall season brings these wonderful, healthy fruits to our table. The little arils of the pomegranate are bursting with vibrant red juices.  Packed with vitamin C and fiber, a super healthy fruit to add to your diet for sure.

Don’t get us wrong we love our greek salads, but it’s kind of nice to change things up a bit when cooler weather approaches. This salad is perfect and beautiful as a holiday side dish!  Also, for a weeknight dinner side, or just prep the day before (minus the dressing) and have it for your lunch during the week.

In Greece, tradition has it that on the first day of the new year a pomegranate must be broken on the door’s threshold of the home for good luck!

This was our view outside of our hotel on the island of Sifnos, Greece – a beautiful huge pomegranate tree! 

Some people are intimidated by the pomegranate because they are unsure of how to cut it or how to get the arils out. We find the easiest way is to cut the pomegranate in quarters. Next fill a bowl with water, dunk one of the quarters in the water and gently start removing the seeds. The water prevents the juice from splattering all over. This may take a few minutes as the seeds will gather on the bottom of the bowl and any leftover skin will float to the top. Pour off some of the water to remove the floating skin. Then pour the pomegranate seeds into a colander to drain off the rest of the water. Your pomegranate seeds are now ready to use in your favorite recipes.

Fall Pomegranate Salad

A salad bursting with juicy fruits staring the pomegranate seeds topped with a lemony vinaigrette dressing.

Ingredients
  

  • 1/4 cup olive oil
  • 2 tsp honey
  • 1 tsp dijon mustard
  • 1 tsp pepper
  • 1/2 lemon juiced
  • 1 8 oz bag of spinach
  • 1 navel orange peeled and sliced
  • 1/2 cup red onion thinly sliced
  • 1/2 cup raisins
  • 4 oz feta cheese
  • 1/2 cup pomegranate seeds

Instructions
 

  • To make the dressing, whisk together in a small bowl the olive oil, honey, mustard, pepper and lemon juice.
  • In a large bowl add the spinach, orange, onion and raisins.
  • Pour the dressing over the salad and give it a gentle toss.
  • Top with pomegranate seeds and feta cheese.
