Breakfast gives our bodies the kick-in-the-pants start it needs to tackle the day ahead (especially this time of year)! Rushing to get out the door on time makes it easy to overlook this important meal of the day. This is especially true on those hectic mornings when the alarm doesn’t go off, the shirt your child wants to wear is still in the wash, the dog throws-up, homework is lost, and you can’t find the car keys! We’ve all been there, and it’s shown that skipping breakfast tends to lead to grabbing a not-so-healthy snack later on in the morning. We see you potato chips, cookies, donuts, muffins, etc., and we are walking away! Make these Cranberry Pistachio Bites, and be a “breakfast skipper” no more! You just need simple ingredients (many you may already have on hand) and 30 minutes of time and voilà! You have healthy grab-and-go breakfast bites! This is a no-bake recipe packed with nutritious ingredients and fantastic taste! You’ll be armed with a perfect healthy-meets-delicious breakfast or mid-morning snack.
So What’s In Them?
- 1 cup Medjool dates
- ¼ cup raw honey
- 1 tbsp ground flax
- ½ tsp chia seeds
- 1 cup dried cranberries
- ½ cup shelled pistachios
- 1 ½ cup rolled oats
- ¼ cup mini chocolate chips
- ¼ cup shredded coconut
Putting It All Together
This recipe starts by using one of our all-time favorites, Medjool dates. Soak dates in a small bowl filled with warm water for 5 minutes. While dates are soaking prepare the rest of the ingredients. In a medium-size bowl, combine flax, chia seeds. cranberries, pistachios, 1 cup of rolled oats and chocolate chips. Remove pits from soaked dates and add them to a food processor. Add in ½ cup of rolled oats, pulse until a soft paste forms. When blended, dates have a caramel-like taste that can be used in many recipes. Add date paste to the cranberry mixture, along with the honey. With a wooden spoon, mix all ingredients thoroughly–you’ll want all that goodness in every bite! Cover the bowl with plastic wrap and place the bowl in the refrigerator for 30 minutes. We cool the mixture because a cool mixture makes it easier to form into cute little balls of goodness. After 30 minutes, remove the bowl from the refrigerator and, using a teaspoonful of the mixture, shape into balls. Place Cranberry Pistachio Bites in the refrigerator in an airtight container for up to 5 days or store in the freezer. That’s it: little bites of healthy and yummy! To be perfectly honest, these bites are so delicious, they won’t last long! Make a double batch and store some in the freezer. They are the perfect lifesaver when you want a nutritious breakfast or snack and don’t have time to prepare something.

Out of the baklava balls, fig & pistachio bites and the cranberry pistachio bites, I have decided that I need to make all 3 recipes at a time, split finished balls, and freeze half, so I can enjoy later!!! They are all winners!!! Thank you sooo much!!
