Chicken Souvlaki is one of the most flavorful main dishes you will find in Greek cuisine. Imagine yourself strolling through the streets of Greece, where you will almost always find a restaurant or street vendor selling souvlaki. The souvlaki in Greece is made with pork, beef, lamb or chicken. Since we try to limit our intake of red meats, we made this dish with chicken. Our recipe for souvlaki is a simple one, using a marinade of olive oil, lemon juice, spices and herbs (similar to Latholemono). Serve grilled souvlaki along with creamy Tzatziki sauce and some grilled pita bread and you’ll have the perfect meal.
How to make the Chicken Souvlaki marinade
- 1 cup olive oil
- juice of one lemon
- 3 cloves garlic minced
- 3 tbsp fresh basil chopped
- 2 tbsp dried oregano
- 1 tsp cumin
- 2 tsp pepper
Make the marinade by mixing together the olive oil, lemon juice, garlic, herbs and spices. Then add your chicken to a bowl or large freezer bag and pour the marinade over the chicken and gently mix so that the marinate coats the chicken. Refrigerate for a least 2 hours prior to grilling or overnight, stirring every couple hours to allow all the flavors to incorporate.
For all you veggie lovers, just omit the chicken and use the same marinade to marinate your vegetables.

- 2 large boneless skinless chicken breasts, cut 1 inch pieces
- 1 large onion
- 1 medium zucchini
- 2 green peppers
- 1 cup olive oil
- 3 cloves garlic minced
- 3 tbsp fresh basil chopped
- 1 lemon
- 2 tbsp dried oregano
- 1 tsp cumin
- 2 tsp pepper
Instructions
- Chopped vegetables into 1 inch pieces and place in large bowl.
- In a separate bowl add the chicken.
- Make the marinade by mixing together the olive oil, lemon juice, garlic, herbs and spices. Pour half of the marinade in the bowl with the chicken and the other half in the veggie bowl. Mix, cover with plastic wrap and refrigerate for a least 2 hours or overnight, stirring every couple hours to allow all the flavors to incorporate.
- When ready, thread chicken and veggies on a skewer. (Note: if using wooden skewers soak them in water for a 1/2 an hour before use)
- Place kebabs on a preheated grill and cook for 15-20 minutes or until chicken is no longer pink.
- Before serving squeeze some additional lemon juice on kebabs.
