Have you tried chia seed pudding yet? If not, you must! It’s our favorite way to use the powerhouse seeds. Our Baklava Chia Pudding recipe is so simple and delicious. This guilt-free healthy dish is perfect for breakfast, a midday snack or even dessert. It only takes a few ingredients and you pretty much set it and forget it!
Why do we love these seeds so much? They are high in antioxidants, vitamins, omega-3, fiber and can reverse inflammation which can regulate cholesterol and lower blood pressure. They give you an energy boost and have 4 grams of plant-based vegan protein in 2 tbsp.

We start with our go-to basic chia pudding recipe which is unsweetened almond milk, chia seeds, and vanilla extract. Then to make it taste like our favorite Greek dessert, baklava, we add in cinnamon, honey, and walnuts for a healthier version with all of the same flavor! When using honey it’s important to use a pure, raw, natural honey which has not been processed to get all of the health benefits of the honey. All three added ingredients are high in antioxidants and can help lower inflammation.
To make this Baklava Chia Seed Pudding recipe vegan just swap out the honey for maple syrup, agave or dates. If using dates as your sweetener you’ll want to put them in a blender with the non-dairy milk first before adding in the chia seeds to ensure a smooth consistency.

Baklava Chia Seed Pudding
Ingredients
- 2 cups unsweetened almond milk or non-dairy milk of choice
- ¼ cup chia seeds
- 1 tsp cinnamon
- 1 tbsp honey (use maple syrup, agave or dates to make Vegan)
- ¼ tsp vanilla extract
- ¼ cup chopped walnuts
Instructions
- Add all ingredients to a 1 pint mason jar
- Cover with the lid and shake well.
- Put the jar in the refrigerator overnight, shaking occasionally (otherwise the seeds will clump together).
- Top with additional nuts, cinnamon, and honey. Serve chilled.
This one is a total winner. I’m always looking for quick and healthy breakfast options that everyone likes. This recipe fits the bill perfectly. It’s easy to make and all I have to do is scoop it out in the morning.
