Baked Stuffed Brie
Although this appetizer looks fancy, it couldn't be easier. You'll steal the show at your next party when you serve this delicious dish. The creamy brie and sweet cranberry sauce add a wonderful flavor to the layers of flaky, crispy phyllo dough.

- 1 8 oz. Brie cheese round
- 8 oz. fresh cranberries washed
- ¼ cup honey
- 1 tbsp. vanilla extract
- 2 tbsp water
- ½ cup walnuts chopped
- ½ cup pecans chopped
- ¼ cup olive oil
Remove the cheese from the packaging and discard any wrappings. Allow cheese to come to room temperature for 30 minutes.
Rinse cranberries in a colander and pick out any berries that are damaged or bruised.
In a saucepan over low heat, combine the cranberries, honey, vanilla, and water, cook until the berries burst (they will make a popping sound) for about 10- 15 minutes. Remove from heat and place in a bowl.
Remove the phyllo dough from the package and unroll the sheets. Cover the dough with a damp towel to keep it moist.
Lay a sheet of phyllo dough horizontally on a dry surface and brush with olive oil. Place another sheet of dough on top. Brush with olive oil, and continue until you have four sheets of dough.
Layer the remaining sheets vertically, brushing olive oil between each layer.
Place cheese in the center of the phyllo sheets and top with the chopped nuts. Saving a few to add to the brie after it is baked.
Fold sheet of phyllo over the cheese. Brush with olive oil and tuck in the sides. Place the brie on the baking sheet covered with parchment paper.
Bake in a 400 degree preheated oven for 25-30 minutes until golden brown. Remove from the oven and spoon the cranberry sauce over the top of the brie adding additional chopped nuts.
Serve hot with apple slices, crunchy crostini, and crackers. Enjoy!
