Ingredients

  • 1 baguette
  • 5 tbsp. extra virgin olive oil
  • 3-4 tomatoes red or yellow
  • 2 cloves garlic minced
  • 1 tbsp balsamic vinegar
  • ¼ tsp pepper
  • 2 -8 ounce halloumi cheese thinly sliced, lengthwise
  • ¼ tsp dried oregano
  • ¼ cup fresh basil chopped

Instructions

  • Preheat the grill to medium.
  • Slice the baguette on the diagonal into half-inch slices. Brush each side with olive oil and toast on the grill for 2-3 minutes. Remove from grill and place on serving dish.
  • In a medium bowl combine the chopped tomatoes, garlic, vinegar, and 3 tablespoons of the olive oil. Mix well, and set aside.
  • Thinly slice the halloumi cheese lengthwise being careful not to slice it too thin. Brush both sides with olive oil and place slices on the grill or in a skillet on the stovetop. Cook until golden brown about 3-5 minutes.
  • Remove cheese from the grill and place one slice of the warm cheese on top of each baguette slice. If some of the slices are larger, cut the slice in half and place one half on each slice of bread. Top with the tomato mixture, a sprinkle of oregano and basil. Serve immediately and enjoy!
