Mediterranean Chickpea Salad

Salad 15 ounce can chickpeas (garbanzo beans) rinsed and drained well 1 English cucumber diced 2 tomatoes diced 1 red bell pepper diced 1 sweet onion diced 3 cups fresh baby spinach chopped ¾ cup Kalamata olives pitted and chopped 1 ounce jar marinated artichoke hearts drained Dressing ¼ cup olive oil 2 tbsp red wine vinegar 1 clove garlic minced 1 lemon juiced 1 tsp oregano salt & pepper to taste
Combine chickpeas with the cucumber, tomatoes, pepper, onion, spinach, kalamata olives and artichokes in a large mixing bowl.
Add the dressing ingredients to a small bowl and whisk to combine (or shake them together in a small mason jar).
Add the dressing to the salad and toss gently until well combined.
Cover and refrigerate for at least 15 to allow the flavors to marinate together. Enjoy!
