Mediterranean Chickpea Salad

This simple Mediterranean Chickpea Salad checks all the right boxes for a fast, healthy and filling salad. It's perfect as a stand alone Meatless Monday dinner or a side dish that will compliment any meal!  Fresh amazing flavors all in one bowl!

Ingredients
  

Salad

  • 15 ounce can chickpeas (garbanzo beans) rinsed and drained well
  • 1 English cucumber diced
  • 2 tomatoes diced
  • 1 red bell pepper diced
  • 1 sweet onion diced
  • 3 cups fresh baby spinach chopped
  • ¾ cup Kalamata olives pitted and chopped
  • 1 ounce jar marinated artichoke hearts drained

Dressing

  • ¼ cup olive oil
  • 2 tbsp red wine vinegar
  • 1 clove garlic minced
  • 1 lemon juiced
  • 1 tsp oregano
  • salt & pepper to taste

Instructions
 

  • Combine chickpeas with the cucumber, tomatoes, pepper, onion, spinach, kalamata olives and artichokes in a large mixing bowl.
  • Add the dressing ingredients to a small bowl and whisk to combine (or shake them together in a small mason jar).
  • Add the dressing to the salad and toss gently until well combined. 
  • Cover and refrigerate for at least 15 to allow the flavors to marinate together. Enjoy!
