Mediterranean Broccoli Bake

This broccoli casserole is filled with Mediterranean flavors! It's a quick and easy side dish recipe that the whole family will love!

Ingredients
  

  • 4 cups broccoli florets (1 medium head)
  • ½ cup red peppers chopped
  • ½ cup kalamata olives pitted & halved
  • 3 tbsp olive oil
  • ¾ cup feta cheese crumbled
  • ½ cup parmesan cheese
  • 2 tsp fresh dill

Instructions
 

  • Wash broccoli thoroughly and cut the crowns away from the large stems. Break the crown into smaller florets. Place the florets in a steamer basket.
  • Add about one inch of water to a pot and bring it to a boil over medium heat. Once the water is boiling, place the steamer basket with the broccoli inside the pot. Cover with the lid and cook for five minute.
  • Preheat the oven to 375 degrees F. Carefully remove the broccoli from the steamer basket and place the broccoli in a baking dish.
  • Add the red peppers and kalamata olives on top of the broccoli. Drizzle with the olive oil. Top with the feta, parmesan and one teaspoon of the dill. Bake in the oven for 15 minutes until the cheeses start to brown.
  • Remove from the oven and add the additional teaspoon of dill. Serve immediately.
