Mediterranean Inspired Smashed Potatoes

Crispy baked smashed potatoes topped with Mediterranean flavors of tzatziki sauce, feta cheese, kalamata olives and oregano!

Ingredients
  

  • 1.5 lbs. baby potatoes washed and unpeeled
  • 1 tsp salt
  • 3 tbsp olive oil
  • 3 tbsp fresh lemon juice
  • pepper to taste
  • ½ tsp dried oregano
  • 10 kalamata olives pitted and halved lengthwise
  • ¼ cup crumbled feta cheese
  • ¾ cup tzatziki sauce

Instructions
 

  • Place the potatoes in a large pot, and add enough cool water to cover them by one inch. Add the teaspoon of salt to the water. Cover, bring to a boil, reduce heat and cook until barely fork tender. Do not overcook the potatoes. Drain and allow potatoes to cool for 3-4 minutes.
  • While the potatoes are cooking, combine the olive oil, lemon juice, oregano, and pepper in a small bowl. Stir until well combined.
  • Spray a baking sheet with non-stick cooking spray and preheat the oven to 400 degrees. Place the potatoes in a single layer on the prepared baking sheet, and with a fork or potato masher, gently press down on each potato to smash them (about ½ inch thick). Spoon the olive oil mixture over each potato. Place the baking sheet in the oven and bake until the potatoes are golden brown and crispy, about 20 minutes.
  • When done, remove the baking sheet from the oven.  Add a dollop of Tzatziki sauce, a sprinkle of feta, oregano and a kalamata olive half on top of each potato. Serve immediately.
