Carrot Fries
This recipe for carrot fries is a healthy alternative to traditional french fries. They are smothered in an herb mixture and baked in the oven then paired with a yummy dipping sauce that enhances the flavor of the carrot fries!

- 1 pound carrots washed and peeled
- 1 tbsp olive oil
- 1 tsp honey
- ¼ tsp garlic powder
- 1 tsp dried oregano
- salt & pepper to taste
- 1 tbsp fresh dill chopped
- Tzatziki Sauce
Preheat to 425 degrees F and line a baking sheet with a silicone mat or parchment paper.
Carefully cut carrots into match sticks using a knife or mandolin. Place them in a bowl and set aside.
In a small bowl combine olive oil, honey and spices and whisk together. Pour the mixture over the carrots and toss to coat.
Lay the carrots out evenly on the baking sheet and make sure to leave room in between. Bake for 10 minutes, flip the carrots and bake for another 5-10 minutes.
Remove from the oven and transfer to a serving plate, sprinkle with fresh dill and serve.
