Carrot Fries

This recipe for carrot fries is a healthy alternative to traditional french fries. They are smothered in an herb mixture and baked in the oven then paired with a yummy dipping sauce that enhances the flavor of the carrot fries!

Ingredients
  

  • 1 pound carrots washed and peeled
  • 1 tbsp olive oil
  • 1 tsp honey
  • ¼ tsp garlic powder
  • 1 tsp dried oregano
  • salt & pepper to taste
  • 1 tbsp fresh dill chopped
  • Tzatziki Sauce

Instructions
 

  • Preheat to 425 degrees F and line a baking sheet with a silicone mat or parchment paper.
  • Carefully cut carrots into match sticks using a knife or mandolin. Place them in a bowl and set aside.
  • In a small bowl combine olive oil, honey and spices and whisk together. Pour the mixture over the carrots and toss to coat.
  • Lay the carrots out evenly on the baking sheet and make sure to leave room in between. Bake for 10 minutes, flip the carrots and bake for another 5-10 minutes.
  • Remove from the oven and transfer to a serving plate, sprinkle with fresh dill and serve.
