Salsa
- 1 whole pomegranate (seeded)
- 1 small red onion (diced)
- ¼ cup chopped cilantro
- ¼ cup crumbled feta cheese
- ¼ cup pitted kalamata olives (diced)
- 2 tbsp lemon juice
Pita Chips
- 1 pkg thin pita bread
- olive oil cooking spray
- seasonings of choice
Salsa
In a medium bowl, toss together the pomegranate, onion and cilantro.
Mix in the feta cheese and kalamata olives.
Add the lemon juice and mix to incorporate all the ingredients.
Cover, and chill in the refrigerator for at least two hours before serving. Serve with homemade pita chips.
Pita Chips
Preheat oven to 350 degrees.
Cut each pita into wedges.
Arrange pita chips on a baking sheet sprayed with cooking spray. Lightly spray chips with the olive oil cooking spray.
Sprinkle chips with the seasoning of your choice. Some ideas are onion powder, garlic powder,cumin, pepper, and chilli powder. Bake until crisp, about 10 - 15 minutes.
