Crockpot Italian Spiced Chicken Orzo Soup
Hearty chicken soup chock full of vegetables and enveloped in Italian spices. Easy to prepare using a crockpot.

boneless skinless chicken breasts

carrots
peeled & sliced

celery
chopped

medium zucchini
sliced

mushrooms

low sodium chicken broth

water

italian seasoning blend

tsp
onion powder
1
tsp
garlic powder

bay leaves

orzo
Instructions
Spray crockpot with non-stick cooking spray.
Add chicken breasts to the bottom of the crockpot bowl.
Top with the carrots, celery, zucchini, and mushrooms. Add chicken broth, spices and the water.
Place bay leaves on top of the liquid in crockpot.
Cover the crockpot and cook on low for 6 hours, or until chicken is thoroughly cooked.
After 6 hours remove chicken, and using a fork shred chicken into bite-size pieces.
Remove bay leaves from the crockpot, add orzo. Continue to cook on low for about 30 minutes or until orzo is tender.
Add chicken back to crockpot, stir, you are now ready to serve and enjoy!
Notes
To make this soup with a spicy kick, choose an Italian seasoning blend that has red chili flakes in it.
