This recipe for Watermelon Radish Salad is light, crisp, bright and super easy to make. With just a few ingredients and a mandolin, this dish can be whipped up in less than 15 minutes and looks so fancy.
Using a mandolin slice the watermelon radish and cucumber into even thin round discs.
Cut the avocado in half and remove the pit, peel the skin off and turn the half cut side down to evenly slice.
On a large plate assemble the salad by layering the radish and cucumber discs, top with sliced avocado and crumble the feta cheese (if using blocked cheese).
Lastly drizzle with olive oil, lemon juice and sprinkle with dill, salt, and pepper to taste. Serve immediately or chill until ready to serve. Store in an airtight container in the refrigerator.
Notes
To make this recipe vegan, omit the feta cheese or sub for vegan cheese.
