Grilled Brussels Sprouts

This recipe takes Brussels sprouts to another level by grilling them and finishing them off with a balsamic dressing.

Ingredients
  

  • 1 lb Brussels sprouts
  • ½ cup olive oil
  • ¼ cup balsamic vinegar
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp oregano
  • pinch of salt

Instructions
 

  • Trim the bottom stem and any yellow or dry leaves from the sprout.
  • In a microwave-safe bowl, add the Brussels sprouts and heat in the microwave on high for 3 minutes. Check to see if sprouts are tender when inserting a knife. If still hard microwave for another 3 minutes.
  • While sprouts are cooking, make the dressing. Mix the olive oil, balsamic, garlic powder, onion powder, oregano, salt and pepper in a small bowl.
  • Add dressing to the bowl of cooked sprouts and mix gently.
  • When sprouts have cooled enough to touch, skewer 4 to 5 sprouts onto each metal/wood skewer. Place skewers on a preheated grill, cover and cook for 3 minutes. Turn sprouts over and continue to grill for another 3 minutes.
  • Before serving drizzle any leftover dressing on top of Brussels sprouts.

Notes

If you are using wooden skewers, soak them in water first before placing sprouts on them to grill. Soaking the sticks prevents them from burning.
