Add egg white to a large bowl and whisk until frothy and light.
Pour nuts into the egg mixture and stir until evenly coated.
In a small bowl, combine salt, cumin, oregano, garlic powder, pepper, paprika and allspice.
Add spice mix to the nuts and stir until nuts are evenly coated.
Spread the nuts in an even layer on a lightly oiled baking sheet.
Baked for 40 minutes, stirring occasionally until nuts look dry and crisp.
Remove from oven and allow to cool. Nuts will continue to dry as they cool. Store nuts in an airtight container at room temperature for up to two weeks.
