To make an incredibly tasty dinner in under 30 minutes that combines fresh ingredients such as tomatoes, fresh basil, spinach, juicy chicken, and walnuts is always a winner! Let’s Make Pesto Chicken Caprese
Homemade pesto comes first! It’s quite simple to make, and if you have an abundance of fresh basil at this time of year, it’s a terrific way to use it up. Since fresh basil is a particularly potent herb, we replaced half of the basil in our recipe with fresh baby spinach. Even so, the basil flavor still comes through. Although store-bought pesto might be delicious, nothing can match the flavor of handmade pesto. And considering how quick and easy it is to make, it is definitely worthwhile!

- Spinach
- Basil
- Walnuts
- Garlic
- Lemon Juice
- Olive oil
- Salt & Pepper
To make the pesto, combine the spinach, basil, walnuts, garlic, lemon juice, salt, and pepper in a food processor and pulse. You’ll notice after pulsing a few times that the mixture is coarse. The next step is to add olive oil. With the motor running, slowly add the olive oil until emulsified. Your pesto is now ready to serve. Now let’s move on to preparing the chicken!

Here’s what you’ll need:
- Thinly sliced chicken breast
- Olive oil
- Tomatoes
- Fresh mozzarella cheese
We love cooking the chicken on an outdoor grill, but if you do not have access to a grill, you can cook the chicken in a pan on the stovetop or in the oven at 375℉ until fully cooked. If grilling, oil the grill grates, and then preheat the grill to medium heat. Pat the chicken dry and brush with olive oil. Grill the chicken on each side for 5 minutes or until the internal temperature, reaches 165°. Here comes the most delicious part of the recipe! During the last few minutes of cooking, spoon some of the pesto onto each chicken breast, add a slice of tomato, and top with two pieces of mozzarella. Close the lid to allow the cheese to become soft. Remove the chicken from the grill and add some chopped basil on top and a drizzle of olive oil. Serve and enjoy!

- 1 clove garlic
- ½ lemon juiced
- 3 tbsp extra-virgin olive oil
- salt & pepper to taste
Instructions
- To make the pesto, combine the spinach, basil, walnuts, lemon juice, salt, and pepper in a food processor and pulse. With the motor running, slowly add the olive oil until emulsified and set aside.
- Oil the grates to cook the chicken on an outdoor grill, and then preheat the grill to medium heat.
- Pat the chicken dry with a paper towel and brush the chicken with olive oil. Grill the chicken on each side for 5 minutes or until the internal temperature reaches 165°
- During the last few minutes of cooking, spoon some of the pesto onto each chicken breast, add a slice of tomato, and top with two pieces of mozzarella cheese. Close the lid to allow the cheese to become soft.
- Remove the chicken from the grill and add some chopped basil on top and a drizzle of olive oil. Serve and enjoy!
