A little potato that is cooked to be incredibly tender on the inside and amazingly crispy on the outside! Now, does that grab your attention? Smashed potatoes are simple enough to make: just boil, smash, and bake. But fair warning, they are highly addictive! Your taste buds are going to enjoy the creamy potato center, the crispy potato skin and, last but not least, the tangy dollop of Tzatziki Sauce! Oh, and did we mention we sprinkle a little feta cheese on top for good measure? If this sounds as amazing to you as it does to us (and we’re sure it does), let’s get smashing!
Here’s what you need
Our favorite part about this recipe (other than its taste!) is that it’s made with basic ingredients that you probably already have in your pantry and refrigerator.
- Baby Potatoes
- Olive Oil
- Fresh Lemon Juice
- Salt and Pepper
- Oregano
- Tzatziki Sauce
- Kalamata Olives
Step By Step Instructions for Amazing Mediterranean Inspired Smashed Potatoes
- Wash your potatoes to remove any dirt. No peeling necessary! We used a combination of baby red and yellow potatoes because the insides of these potatoes are very buttery and the skins are not tough and will crisp up nicely. You want nice brown crispy edges!
- Place the potatoes in a large pot, and add enough cool water to cover them by one inch. Add a teaspoon of salt to the water. Cover, bring to a boil, reduce heat and cook until barely fork tender. Do not overcook the potatoes. Overcooking will leave the potatoes too soft and when smashed they will become too flat. Barely fork tender is the trick! Drain and allow potatoes to cool for 3-4 minutes.
- While the potatoes are cooking, combine the olive oil, lemon juice, oregano, and pepper in a bowl. Stir until well combined.
- Spray a baking sheet with non-stick cooking spray and preheat the oven to 400 degrees.
- Place the potatoes in a single layer on the prepared baking sheet, and with a fork or potato masher, gently press down on each potato to smash them (about ½ inch thick). Spoon the olive oil mixture over each potato.
- Place the baking sheet in the oven and bake until the potatoes are golden brown and crispy about 20 minutes.
- When done, remove the baking sheet from the oven and add a dollop of Tzatziki sauce, a sprinkle of feta and a kalamata olive half on top of each potato. Serve immediately.
- Just a quick note about the Tzatziki sauce. We love making our own and you can find our recipe linked here. But there are definitely times when the store bought Tzatziki sauce comes in handy, especially when you are pressed for time. Either way is fine; and there is no right or wrong way!
