Homemade Wheat Pasta cut into strips

We’re calling on all of our pasta lovers to try this easy recipe for Homemade Wheat Pasta!  Sure, you can buy endless varieties of pasta at the grocery store, but since everyone is spending so much time sheltering at home due to the coronavirus, why not give this recipe a whirl?!  Made with ingredients you probably already have in your pantry, Homemade Wheat Pasta comes together in no time at all. Best of all, this pasta is fresh and healthy, and–trust us–well worth the effort for delicious fresh pasta.  

Pasta Machine Vs. Rolling Pin

The most important step in making pasta is rolling the dough into thin strips.  Although using a pasta machine makes this process much easier, you can roll out the dough using a rolling pin.   Our pasta machine has been handed down in our family for many years, so while it may not be the fanciest pasta maker, it has great sentimental value!  With every turn of the handle, we think of those in our family who so lovingly used it before us. If you choose to use the rolling pin method, you’ll need to roll the dough out until the desired thickness of your noodles is achieved. This does add some extra time to the process, but should not deter you from enjoying homemade pasta.

Let’s Make Some Dough!

The first step is making the dough, and it couldn’t be easier.  Using a stand mixer or food processor, add all the ingredients to the bowl and knead for 5 minutes.  The dough should stick together, forming a ball. At this point, cover the dough with a towel, and let the dough rest on the counter for 30 minutes.

Once the dough has rested, separate the dough into eight equal pieces.  As always, before proceeding, check the owner’s manual for instructions on how to operate your pasta machine. Start the rolling process on a thicker number setting and adjust the settings gradually until the dough has achieved the desired thickness. Fold the dough over in half as you continue to run it through the machine to flatten it out.  It’s important to make sure the dough is covered with flour so that it does not stick to the machine. Once you have your strips ready, it’s time to cut the noodles! One note here: your noodles will be the length of the strips you have made, so if you like a shorter noodle cut the strip shorter.  Now comes the fun part, cutting the pasta! Run each section of dough through the cutter side of the pasta maker, and just like that: you have made Homemade Wheat Pasta!  Use your fingers to separate the pasta, sprinkle with more flour if needed to prevent sticking.   Allow pasta to air dry for at least 15 minutes to prevent clumping while cooking.

Rolling Pin Method

After the dough has finished resting, separate the dough into 5 sections.  Leave one section out and cover the remaining dough sections with a towel. Flour your counter well, and use your rolling pin to roll out one section of dough into a long strip.  Continue to roll the dough, lifting the dough to flip over and re-dust the counter with flour. Dough is ready when you have rolled it to the desired thickness. The dough should be strong enough to be lifted off the countertop, so be careful you have not rolled it too thin. Dust the strip with more flour and starting with the short end fold the dough strip like an accordion.  Using a sharp knife, cut across the folds to make strips as thin or thick as you prefer. Unroll the bundle of noodles and lay them out to dry. 

Cooking Your Homemade Wheat Pasta

Are you ready to enjoy the delicious pasta you just made? Just like pasta you purchase at the store, homemade pasta is cooked the same way. Bring a large pot of water to a boil, shake off any excess flour from noodles and add them to the pot. It’s really important to note that fresh pasta cooks in a fraction of the time that boxed pasta takes. Usually, 3 minutes does the trick, depending on the thickness of your pasta. If you made your pasta thicker, it may need a few extra minutes to cook. Cook until noodles float to the top and are tender. Drain noodles in a colander and top with your favorite pasta sauce. One of our favorite ways to enjoy pasta is with a drizzle of olive oil, followed by a touch of fresh herbs, chopped tomatoes and a sprinkle of feta cheese. Ingredients
  

  • 1 1/2 cups whole wheat flour
  • 1 1/2 cups all purpose flour
  • 1/2 teaspoon salt
  • 5 eggs
  • 2 teaspoons olive oil
  • 2 tablespoon water

Instructions
 

  • In the bowl of your stand mixer combine the whole wheat flour, all purpose flour and salt.
  • Add in the olive oil and eggs and stir to combine.
  • Attach the dough hook to your stand mixer and knead on low for 6 minutes. You may need to stop the mixer several times to make sure all the flour gets incorporated. If dough still seems dry, add water.
  • Remove the bowl from the stand, cover it with a cloth and let it rest at room temperature for 30 minutes.
  • Separate the dough into 8 equal sections.
  • To roll the dough, take a section of the dough and flatten it with your hand.
  • Run the dough through the pasta rollers at the widest setting. Please be sure to use extra flour on your dough and pasta machine so that the dough does not stick.
  • Fold the dough in half and run it through again on a narrower setting.
  • Continue until the dough gets the desired thickness.
  • Now pass the sheet of dough through the cutter side of the pasta maker using whatever shape noodle you prefer.
  • Use your fingers to separate the noodles, adding more flour as needed.
  • Before cooking the noodles, allow the noodles to air dry for 15 minutes to prevent clumping.
  • Bring a pot of lightly salted water to a boil.
  • Add in your homemade pasta, and cook for 3-4 minutes, depending on the thickness of your pasta. Fresh pasta cooks much faster than the boxed pastas.
  • The noodles will float to the surface when fully cooked. Drain and use in your favorite recipes.
