Grilled Pineapple with Frozen Blueberry Yogurt

Ingredients
- 1 cup greek yogurt
- 3 cups frozen blueberries
- 2-3 tbsp honey
- 1 pineapple cored and sliced
- olive oil
Instructions
- Using a food processor, add the yogurt, blueberries and honey to the bowl. For a less sweet yogurt, use only 2 tablespoons of honey.
- Process the mixture until it becomes creamy. Scraping down sides of bowl to make sure there are no lumps. This usually takes about 3-5 minutes.
- For a softer frozen yogurt, serve it immediately or for a harder version add yogurt to an airtight container and freeze until ready to use. When stored properly in the freezer, yogurt will keep for one month.
- Preheat the grill to medium.
- Brush both sides of pineapple slices lightly with olive oil, and place on grill.
- Grill for 3-4 minutes each side, or until heated thoroughly and grill marks appear.
- Remove from grill and place on serving plate. Top each slice with a scoop of frozen blueberry yogurt. Serve immediately.
