We’re winding down summer with our take on Greek Style Corn On The Cob. Fresh corn is one of our favorite August vegetables to enjoy, and honestly, we could make an entire meal of it! There’s nothing like biting into a freshly cooked ear of corn straight from the farmers market.
In Greece, it’s very common to see vendors selling grilled corn on the cob, brushed with olive oil and topped with a dash of sea salt! It’s a summer staple that we have enjoyed many times on our visits there. Grilled corn has a distinctive smoky char flavoring, so for this recipe, we decided to boil the corn instead so that we could enjoy the full flavor of corn smothered with the creamy topping we’ve added. Of course, if you want to add more depth and smokiness to the corn, by all means, grill away!

That’s it! A simple, no fuss list of ingredients and, best of all, it’s ready in under 10 minutes! Are you ready to get started?!
First of all, we need to peel the corn. Grab the tassel of silk from the top along with a few green leaves and pull from top to bottom. Repeat until all the leaves and silk has been removed.
Fill a large stockpot about halfway full with water. Bring the water to a boil over medium high heat. While you are waiting for the water to boil, start the topping. In a small bowl add the Greek yogurt, feta cheese and oregano, mix thoroughly. It’s amazing how with just a few ingredients, this topping compliments the corn with an explosion of flavors. Once the water has come to a boil, add the peeled corn on the cob. Bring the water to a boil again and cook the corn for 5 minutes. Remove the corn on the cob from the hot water and place on a serving dish. Slather the boiled corn with the yogurt topping, adding a sprinkle of feta cheese and additional oregano. Serve hot and enjoy!

Greek Style Corn On The Cob
Ingredients
- 4 ears corn peeled
- 1 cup Greek yogurt
- ¾ cup feta cheese crumbled
- 1 tsp oregano
Instructions
- Peel the corn on the cob by removing leaves and silk.
- Fill a large stockpot halfway with water and bring the water to a boil over medium heat.
- While waiting for the water to boil, prepare the topping. In a small bowl, add the Greek yogurt, 1/2 cup of the feta cheese and 1/2 teaspoon of the oregano. Mix thoroughly and set aside.
- Add the peeled corn to the boiling water and return the water to a boil. Once boiling, cook the corn for 5 minutes.
- Remove the corn from the hot water, and place the ears on a serving plate.
- Using a spoon, slather the topping onto each ear of corn. Adding an additional sprinkling of feta cheese and oregano. Serve hot and enjoy!
