These Fig and Pistachio Blissful Bites are just that, blissful! They taste like dessert but are so good for you. Great for grab and go breakfast, an afternoon snack and after dinner treat. Make them for guests and they’ll gobble them up!
Made with less than 10 ingredients, they can be whipped up in a flash. While we’re on the subject of ingredients have you checked out what’s in these balls? Aside from figs and pistachios, they have heart-healthy oats, walnuts, honey and almond butter. Have you tried almond butter before? If you haven’t, go get some, now! Once you’ve had it you’ll start subbing it in recipes that call for peanut butter. The powerhouse chia seeds and flax as filled with fiber, omega-3 fatty acids, protein, vitamins and minerals. They help keep you energized and great for heart-healthy diets. And the final ingredient, dark chocolate, don’t skip this one. The little-added drizzle takes the balls to another level, better yet, another planet! It also adds a nice little outer crunch.

Fig & Pistachio Blissful bites

Ingredients
- 5 fresh figs
- ½ cup pistachios
- 1 tbsp honey (use maple syrup or agave for Vegan)
- ¼ cup walnuts
- ¼ cup almond butter (or nut butter of choice)
- 1 tbsp ground flax
- 1 tbsp chia seeds
- 1 cup oats
- 2 tbsp vegan dark chocolate
Instructions
- Chop figs and add to a food processor with 1 Tbsp pistachios, honey, walnuts, almond butter, flax and chia seeds.
- Process until all ingredients are incorporated, pausing to scrape down the sides.
- Transfer to a bowl and fold in oats, cover and place in the refrigerator for at least ½ an hour. Chop up the remaining pistachios.
- To form the balls scoop about 1 tablespoon of the mixture and with wet hands roll into a ball, then roll in the chopped pistachios.
- Place on a parchment-lined plate. Repeat until all of the mixture has been used. Place back in the refrigerator to firm up.
- The mixture will be wet but don’t worry the balls will harder in once they are cooled. I let mine sit overnight.
- In a microwave-safe bowl add chocolate and cook for 30 seconds at a time until all of the chunks have melted.
- Put a little of the melted chocolate on a spoon or fork then drizzle the top of each ball.
- Place back into the refrigerator for at least 10 minutes for the chocolate to set up. Then enjoy!

Will it work with reconstituted dried figs? We only get fresh figs in August/September.
Hi Jan, Not sure if the would work, but you might soften the dried figs in boiling water before using them in the recipe. However, dried figs will change the flavor/consistency of the dish.
