How do we know that it’s officially Fall? Well, besides the date on the calendar, the farm markets and grocery stores are overflowing with many different varieties of delectable squash. One of our favorites is the acorn squash. Shaped like an actual acorn, it has long ridges on the outside and on the inside, a sweet yellow-orange flesh. A favorite Fall recipe of ours is Everything Bagel Acorn Squash. It’s a simple recipe that uses the popular seasoning mixture (Everything Bagel) which can be purchased from many stores. We love using the Aldi’s brand of Everything Bagel Mix, but if you don’t have an Aldi near you, you can make your own. Toss a combination of poppy seeds, white and black sesame seeds, dried onion flakes, dried garlic and a pinch of coarse salt together in a small bowl and voilà, you’ve made your own mix! Not only is the seasoning mixture great in this recipe, but it’s also a perfect topping for steamed and roasted vegetables, chicken, fish and even scrambled eggs. The possibilities are endless!
Picking The Perfect Squash
Now it’s time to pick the perfect squash for our Everything Bagel Acorn Squash. First, pick a squash that is dark green in appearance and feels heavy when held in your hand. Secondly, make sure the squash is free of mold and blemish spots. No soft spots or cracks allowed–we want a nice, firm vegetable. Last but not least, a ripened acorn squash will have a spot of orange, indicating where it came in contact with the ground before harvesting. If your squash fits this criteria, it’s good to go!
Cutting an acorn squash is easy when following these simple steps:

- Start with a sturdy, sharp knife (so important)
- Trim bottom and stem top off
- Cut squash in half, top to bottom
- Scoop out seeds and membrane (using a melon baller makes it easier)
- Lay the halved squash on its flat side and cut the squash into 1” thick slices
Spray a rimmed baking sheet with nonstick cooking spray. Place your squash slices on the baking sheet and brush with olive oil. Sprinkle the slices with bagel seasoning mixture. Flip slices over and repeat on the other side with olive oil and spice mixture. Add a drizzle of honey to each slice before placing the baking sheet in a preheated 375-degree oven. Roast for 25 minutes on one side, flip slices over, add another drizzle of honey to each slice and continue baking for another 15 -20 minutes. Squash is ready when it becomes soft and caramelized. Once out of the oven, add some Feta Cheese on top of each slice. You are now ready to serve the most delightful Fall side dish!
Roasting squash certainly brings out a sweetness and caramelized taste that will have you reaching for more. And with the salty addition of the Feta Cheese, well, can this dish get anymore scrumptious?! We think not. Enjoy!

Everything Bagel Acorn Squash
Ingredients
- 2 acorn squash
- 3 tbsp olive oil
- 3 tsp everything bagel seasoning mix
- 1 tbsp honey
- ½ cup crumbled feta cheese
Instructions
- Preheat oven to 375° F.
- Wash the squash, then dry with a towel.
- Cut the bottom and stem top off each squash.Then Cut the squash from top to bottom.
- Using a melon baller or spoon, remove the seeds and membranes.
- Lay each acorn half on its flat side, and cut the squash into 1” thick slices.
- Spray a rimmed baking sheet with nonstick spray.
- Place acorn slices on baking sheet in a single layer.
- Brush olive oil onto the top of each slice and sprinkle with bagel seasoning. Add a drizzle of honey on each slice before placing sheet pan in oven.
- Roast for 25 minutes, flip slices over and add another drizzle of honey on top of each slice.
- Continue to roast for 15 more minutes, or until squash is soft and caramelized.
- Remove from oven and add a sprinkling of feta cheese to the top of each slice. Serve warm and enjoy!
