Nothing says summer quite like a cold glass of lemonade, right!? This recipe for Cucumber Mint Lemonade is so refreshing and perfect on a hot day! We used fresh from the garden ingredients to whip up this bright and hydrating drink. Enjoy it on the patio with a good book, serve it up for family and friends at a bbq, or sip it poolside!
Fresh Ingredients
There’s no juice concentrate in this lemonade recipe. We prefer to use all the fresh ingredients. The reason? They taste better! And you can control exactly what goes into your drink based on your preferences. If you like your drink sweeter than you can add more honey or if you prefer it less tangy you can cut back on the lemon juice.
- Cucumbers: refreshing and super hydrating due to the fact that they are mostly water (96%!). They are low in calories but packed with vitamins and minerals and are high in antioxidants.
- Lemons: high in vitamin C which supports heart health and boosts the immune system! Lemons also aids in digestion.
- Mint: not only does it make your breath fresh, but it also aids in digestion.
How to Make Cucumber Juice
To make the cucumber juice first start by peeling off the skin and giving it a rough chop. If the seeds are really large you can remove them. Otherwise use a juicer or blender to create the juice. If using a blender (which is what we did), about ¼ cup of water will need to be added to the chopped cucumber. Blend until juice is formed. Then, place a mesh strainer over an empty bowl and add the cucumber juice. Strain the pulp by using the back of a spoon and gently pressing down to release the juice into the bowl. Our cucumber created about ¾ cup of juice.

Honey Simple Syrup
We created an easy simple syrup that uses honey and water instead of refined sugar. It just takes a few minutes to make. Combine honey and water in a small saucepan over medium heat and stir until the honey is dissolved. Then allow it to cool before mixing it with the remaining ingredients and that’s it!

Cucumber Mint Lemonade

Ingredients
- ¾ cup cucumber juice
- ¾ cup lemon juice
- ½ cup pure honey
- ½ cup filtered water
- 2 sprigs mint leaves (or more)
Instructions
- Peel the cucumber and add to a blender with ¼ cup water (if there are large seeds, you can remove the seeds). Blend on high until a juice is formed.
- Place a mesh strainer over a bowl and pour the cucumber mixture into the strainer. Use the spoon to gently press down to release all of the juice. Juice lemons to create ¾ cup of juice (we used 4½ lemons)
- Heat a small pot over medium heat and add in the honey and ½ cup of water. Stir until it comes to a soft boil and remove from the heat to cool.
- In a large pitcher assemble the lemonade by adding in the cucumber juice, lemon juice and honey syrup. Give that a stir and fill the rest of the pitcher with filtered water. Serve immediately over ice or cool in the refrigerator until ready to serve.
