With limited hours of daylight and record low temperatures, we couldn’t help but make a batch of Crock Pot Italian Spiced Chicken Orzo Soup. One of the best things about this hearty soup (other than its taste) is its ‘set it and forget it’ nature. That certainly makes this recipe one of our favorites! For us, there’s nothing more comforting than a big bowl of hot soup on a cold winter day.
This Crock Pot Italian Spice Chicken Orzo soup requires minimal prep time. Plus its chock full of healthy ingredients, including four (yes, four!) different kinds of fresh veggies. And with the blend of Italian seasonings, you’ll be enveloped by the warmth and comfort of the soup. Although we aren’t Italian, there are many similarities in the ingredients that both Greek and Italian cultures use in cooking. There’s nothing better than sitting down with a nice bowl of homemade soup. Come faceva la nonna (just like grandma used to make!)!

Crockpot Italian Spiced Chicken Orzo Soup
Ingredients
- 2 boneless skinless chicken breasts
- 2 cups carrots peeled & sliced
- 2 cups celery chopped
- 2 medium zucchini sliced
- 2 cups mushrooms sliced
- 1 cup low sodium chicken broth
- 6 cups water
- 2 tbsp italian seasoning blend
- 1 tsp onion powder
- 1 tsp garlic powder
- 2 bay leaves
- 1 cup orzo
Instructions
- Spray crockpot with non-stick cooking spray.
- Add chicken breasts to the bottom of the crockpot bowl.
- Top with the carrots, celery, zucchini, and mushrooms. Add chicken broth, spices and the water.
- Place bay leaves on top of the liquid in crockpot.
- Cover the crockpot and cook on low for 6 hours, or until chicken is thoroughly cooked.
- After 6 hours remove chicken, and using a fork shred chicken into bite-size pieces.
- Remove bay leaves from the crockpot, add orzo. Continue to cook on low for about 30 minutes or until orzo is tender.
- Add chicken back to crockpot, stir, you are now ready to serve and enjoy!
