Our recipe for Chicken Meatball Salad Bowl with Couscous is a PERFECT example of that kind of recipe. Ready in under 30 minutes, it’s a great weeknight meal. We will definitely be adding this to our weekly routine because it’s as delicious as it is simple–and we can get on board with that, especially during this busy time of year.
How To Make The Meatballs
- Preheat oven to 375 degrees
- Combine ground chicken, panko, and egg in a bowl.
- To the meat mixture add in minced garlic, onion, lemon juice, salt, pepper, oregano and cumin (optional), mix thoroughly.
- Form into one inch balls and place the meatballs on a baking sheet. Place the baking sheet in the refrigerator for 15 minutes to firm.
- Remove from the refrigerator, top each meatball with a splash of olive oil and place the baking sheet in a preheated oven for 10 minutes or until the internal temperature reaches 160 and the meatballs are golden brown.
Making the Perfect Couscous
Couscous is very quick and easy to whip up! When meatballs have been in the oven for 5 minutes, begin almost preparing the couscous.
- Add one cup of water and one teaspoon olive oil to a saucepan. Bring to a boil.
- Add one cup of couscous to the boiling water, cover with a lid and remove the pan from heat.
- Let stand for 5 minutes and then fluff with a fork.
In keeping with the simplicity of this dish, the dressing is equally as easy to prepare. Combine all dressing ingredients in a small bowl or jar with a lid. Whisk ingredients (or shake if using a jar) until combined. That’s it!

Assembling The Chicken Meatball Salad With Couscous
- Add ½ cup couscous to a bowl.
- Top with 1 cup mixed greens of your choice.
- Top with sliced cucumbers, feta cheese and kalamata olives.
- Add 3-4 of the chicken meatballs and a drizzle of the dressing.

Chicken Meatball Salad Bowl with Couscous
Ingredients
Meatballs
- 1 lb. ground chicken breast
- 1 egg
- ½ cup panko
- 2 cloves garlic minced

- 1 tbsp lemon juice fresh squeezed
- 1 tsp dried oregano

Couscous
- 1 tbsp olive oil
- 1 cup water
- 1 cup couscous
Salad
- 1 english cucumber sliced
- 4 cups lettuce greens of choice
- 1 cup feta cheese crumbled
- 1 cup kalamata olives
Dressing
- 1½ tbsp lemon juice fresh-squeezed
- 1 tbsp honey
- ¼ cup white balsamic vinegar
- ½ cup olive oil
- ½ tsp dijon mustard
- ¼ tsp pepper

Dressing
- In a small bowl (or mason jar) add the lemon juice, honey, white balsamic vinegar, oil, mustard and pepper. Whisk (shake) very well until completely blended and smooth.
Assemble
- To each bowl, add ½ cup couscous. Top with 1 cup mixed greens of your choice, sliced cucumbers, feta cheese and kalamata olives. Place 3-4 chicken meatballs on top. Drizzle the entire salad with the honey dressing.
Calories seem really high. What is the serving size for that?
Susan, it does seem a little high. We will take a look at the calculations again. By looking it’s seems to be the olive oil, but olive oil is considered a healthy fat and an important part of a heart healthy diet. The recipe makes a good size serving for 4.
