The bread is filled with many of the ingredients found in a traditional spanakopita, such as spinach, feta, parmesan cheese, and herbs. This recipe is almost too good to be true, but believe it when we say “there is a bit of spanakopita goodness in every bite!” Who could resist? Spanakopita Pull Apart Bread- A Little Secret!
Here is the first secret to the recipe: it’s made using frozen dinner rolls. You know, the ones you thaw, rise and then bake. Could it be any simpler? No time-consuming hours spent making homemade bread here! Remove 24 rolls from the package and lay them on a baking sheet sprayed with non-stick cooking spray. Cover them with plastic wrap that has been sprayed with nonstick cooking spray also and allow the rolls to thaw for one hour. The rolls will be thawed but not risen.

While the rolls are thawing prepare the filling. Heat 2 tablespoons of olive oil in a pan. Add finely chopped onion, and saute until soft. Remove from heat and allow to cool. To a medium-sized bowl add the thawed, squeezed spinach. Add in the parmesan cheese, feta and herbs and mix thoroughly. Add the cooled onion to the spinach mixture and stir until all ingredients are incorporated. Place in refrigerator until rolls are thawed.
Spray the bundt pan with nonstick cooking spray. Uncover the rolls and place 2 tablespoons of olive oil in a small bowl (we used a custard cup). Take each roll and dip them into the olive oil. Begin layering the bottom of the pan with the rolls. Once you have completed the bottom layer, add in half of the spinach mixture. Continue adding another layer of rolls and complete with the remaining spinach mixture. Be sure to get spinach mixture in all those nooks and crannies.
Cover the bundt pan with plastic wrap sprayed with nonstick cooking spray. Allow dough to rise until it has doubled in size, approximately 1 ½ – 2 hours (this time will depend on how warm the room is). Carefully remove plastic wrap. Bake at 350 degrees F for 35-40 minutes. Cook until the top is golden brown. Cool for 10 minutes. Loosen sides of the bread from the pan with a knife, then turn the pan over serving dish.
