Warm Stuffed Figs
Ingredients
- 8- 10 medium fresh figs
- 2 tbsp greek yogurt
- 2 tbsp crumbled feta cheese
- 2 tbsp chopped walnuts
- 3 tbsp honey
Instructions
- Wash and dry the figs gently with a paper towel.
- Set the oven to broil as it only takes a few quick steps to prepare the figs.
- Cut off stems and starting at the top of the fig, cut a cross shape to open it up, being careful not to cut all the way through. Fig should fan out slightly.
- In a small bowl mix yogurt and feta until smooth. It’s fine if there are a few crumbles still visible.
- Spoon the mixture into the opened-out figs.
- Sprinkle some chopped walnuts over the cheese mixture and drizzle with honey.
- Broil for about 5 minutes, keeping a watchful eye so that the figs do not burn. We are basically just warming up the figs, not cooking them. Figs are done when they appear soft and they release juice.
- Remove from oven and allow to cool for a few minutes before serving. Additional honey and walnuts can be added before serving also. Figs can either be served warm or cold.
