Grecian Tacos
Ingredients
- 3 large boneless skinless chicken breast, cut into bite-sized pieces
- 2 tbsp olive oil
- ½ cup water
- 1 tbsp chili powder
- 1 tbsp cumin
- ½ tsp onion powder
- 1 tsp garlic powder
- ½ tsp paprika
- 1 tsp pepper
- 1 tsp oregano
- 1 pkg whole wheat tortilla
- 2 cups chopped cucumber
- 2 cup sliced cherry tomatoes
- 1 cup sliced red onion
- 1 cup chopped Kalamata olives
- 1 cup crumbled feta cheese
- Tzatziki Sauce
Instructions
- Heat the olive oil in a skillet over medium-high heat.
- Add the chicken breast and cook, browning a couple of minutes on each side.
- Continue to cook for about 6 minutes.
- Add water and spices to the pan, stir until coated, and continue to cook until chicken is thoroughly cooked.
- In a preheated 200 degree oven heat tortillas on a baking sheet until warmed.
- Place some chicken pieces in the center of a tortilla shell and top with cucumber, tomato, onion, Kalamata olives, and feta cheese. Top with a drizzle of tzatziki sauce.
