Sweet Potato Feta Wonton Cups

Quick and easy Sweet Potato Feta Wonton Cups are the perfect healthy party appetizer.

Ingredients
  

  • 2 sweet potato peeled and cubed
  • 1 cup crumbled feta cheese
  • 12 kalamata olives pitted and halved
  • 24 wonton wrappers

Instructions
 

  • Preheat oven to 350°F and spray two 12-cup mini-muffin tins with cooking spray.
  • Cut the corners off the wonton wrappers and gently press each wrapper down into each cup of the muffin tin. (Be careful not to puncture the bottom of the wonton wrapper)
  • Lightly spray wrappers with cooking spray. Place the pans in the oven and bake for 5-7 minutes or until the wrappers start to turn golden brown and crispy. Watch them carefully, as they will cook quickly.
  • Let cups cool for a few minutes then turn them out onto a rack to cool completely.
  • Meanwhile, in a covered small saucepan, cook potato in boiling, lightly salted water about 20 minutes or just until tender.
  • Drain water from pan. Add ¾ cup of the feta cheese and whip potatoes with a hand mixer until smooth and creamy.
  • Place a teaspoon of sweet potato filling in each wonton cup. Top with a kalamata olive half and additional feta cheese. Serve warm.

Notes

Feel free to double the recipe to make more cups. This recipe is based on a serving of 2 per person.
