Mediterranean broccoli bake out of the oven

This Mediterranean Broccoli Bake recipe is two of our favorite things: simple to make and incredibly delicious! If you’re looking for a healthier alternative to the traditional broccoli casserole generally made with heavy creams and cheeses, this recipe is the perfect substitute. Super fast and super fresh, you can’t go wrong by rounding out your meal with this dish. The whole process takes just 25 minutes from prep time to cook time and the results are delightful. How to Steam Broccoli

This recipe begins by steaming the broccoli. The most important thing to know about steaming broccoli is that cooking broccoli for more than seven minutes results in overcooking! Broccoli cooks really fast, so extra steaming time can change the texture and color quickly. For this recipe you’ll want to steam the broccoli for only 5 minutes, since we will continue to bake it in the oven afterwards. The broccoli should be a vibrant green color after only 5 minutes. Cook it any longer and the broccoli will become too soft and will be more of an olive green color.  Keep a watchful eye on the time!

  1. Wash the broccoli and cut the crowns away from the large stem. Break the crowns into smaller florets.
  2. Put about one inch of water in your pot and bring the water to a boil over medium heat.
  3. Add the broccoli florets to your steamer basket and insert the basket into the pot of boiling water.
  4. Cover with the lid and steam for 5 minutes.
  5. While the broccoli is steaming, prepare the other ingredients. Chop the roasted red peppers into small pieces and halve the pitted kalamata olives.

Assemble and Bake

Now that the broccoli is steamed and ready to go, it’s time to assemble the rest of this amazing dish. 

  1. Carefully remove the steamed broccoli from the steamer basket and place the broccoli in a baking dish. We used a square 9 by 9 baking dish. 
  2. Add the chopped red peppers and kalamata olives on top of the broccoli. 
  3. Drizzle with olive oil.
  4. Top with the feta, parmesan cheeses, and one teaspoon of the dill. 
  5. Bake in the oven for 15 minutes or until the cheeses start to brown.  Remove from the oven and add the additional teaspoon of dill. Serve immediately.

Ingredients
  

  • 4 cups broccoli florets (1 medium head)
  • ½ cup red peppers chopped
  • ½ cup kalamata olives pitted & halved
  • 3 tbsp olive oil
  • ¾ cup feta cheese crumbled
  • ½ cup parmesan cheese
  • 2 tsp fresh dill

Instructions
 

  • Wash broccoli thoroughly and cut the crowns away from the large stems. Break the crown into smaller florets. Place the florets in a steamer basket.
  • Add about one inch of water to a pot and bring it to a boil over medium heat. Once the water is boiling, place the steamer basket with the broccoli inside the pot. Cover with the lid and cook for five minute.
  • Preheat the oven to 375 degrees F. Carefully remove the broccoli from the steamer basket and place the broccoli in a baking dish.
  • Add the red peppers and kalamata olives on top of the broccoli. Drizzle with the olive oil. Top with the feta, parmesan and one teaspoon of the dill. Bake in the oven for 15 minutes until the cheeses start to brown.
  • Remove from the oven and add the additional teaspoon of dill. Serve immediately.
