Grilled Brussels Sprouts
Ingredients
- 1 lb Brussels sprouts
- ½ cup olive oil
- ¼ cup balsamic vinegar
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp oregano
- pinch of salt
Instructions
- Trim the bottom stem and any yellow or dry leaves from the sprout.
- In a microwave-safe bowl, add the Brussels sprouts and heat in the microwave on high for 3 minutes. Check to see if sprouts are tender when inserting a knife. If still hard microwave for another 3 minutes.
- While sprouts are cooking, make the dressing. Mix the olive oil, balsamic, garlic powder, onion powder, oregano, salt and pepper in a small bowl.
- Add dressing to the bowl of cooked sprouts and mix gently.
- When sprouts have cooled enough to touch, skewer 4 to 5 sprouts onto each metal/wood skewer. Place skewers on a preheated grill, cover and cook for 3 minutes. Turn sprouts over and continue to grill for another 3 minutes.
- Before serving drizzle any leftover dressing on top of Brussels sprouts.
